The newly unveiled fine dining concept at the resort is unlike anything else currently unfolding across the Indian Ocean.

Named after the nimble Portuguese caravels that transformed maritime exploration between the 14th and 17th centuries, Caravela is not merely a restaurant.

It is an immersive gastronomic expedition where history, culture, storytelling and extraordinary cuisine converge into one remarkably seductive evening.

Limited to just twelve guests per sitting, the dinner-only experience unfolds around a communal table designed to encourage conversation, curiosity and connection. Strangers arrive. Fellow travellers depart.

The inaugural tasting menu, The Atlantic Voyage of 1487, retraces the path of early explorers who sailed from Iberia down the western coast of Africa towards the legendary Cape of Storms in search of a sea route to India.

Each course becomes a chapter. Each flavour a waypoint. Each sip another nautical mile travelled.

As the first plates arrive, anticipation ripples across the table.

First Light of the Atlantic appears as delicate King Crab fritters crowned with glistening ikura and brightened by lime-yuzu vinaigrette.

Crisp, saline and vibrant, it evokes the exhilaration of departure—the moment a vessel finally slips beyond the horizon.

Conversation begins.

Wine glasses are raised.

Then comes Winds of the Cantabrian Sea, a beautifully torched loin of Maldivian tuna dressed with escabeche and nuanced Moroccan spices.

The dish bridges oceans and civilisations, demonstrating how trade routes transformed culinary traditions long before the world became interconnected by modern technology.

By the time Crossing the Madeira Currents arrives—a pristine local job fish accompanied by confit plantain purée and an intricate prawn coral tuile—the table has relaxed into easy camaraderie.

The architect debates travel with the novelist. The chef exchanges tasting notes with the diplomat. Discovery, after all, has always been as much about people as places.

A palate-cleansing green apple sorbet inspired by the Wambugu apples of western Africa prepares guests for the menu’s dramatic centrepiece: Benguela Shores at Dusk.

Here, pork belly is cooked sous vide for twelve hours until impossibly tender before being lacquered with smoky chilli glaze and finished with a rich Spanish chorizo jus. It is bold, comforting and profoundly satisfying—the culinary equivalent of sighting land after months at sea.

Then comes the triumphant finale.

Triumphant Return to Iberian Coast presents an elegant olive oil cake accompanied by port wine and blood orange gel, concealed beneath a delicate sugar sphere inspired by the Armillary Sphere, the iconic symbol of Portuguese navigation. When the sphere shatters, the room falls momentarily silent.

Not because the guests are polite.

Because they are enchanted.

Petit fours follow—caramelised torrija, coffee chocolate bonbons and South African milk tart—subtly hinting at the voyages yet to come.

That sense of anticipation is central to Caravela’s appeal. Future chapters will include The Pacific Voyage of 1492 and The Indian Ocean Voyage of 1498, each introducing new flavour maps inspired by the maritime expeditions that shaped the world’s culinary landscape.

 It transforms dining into an ongoing collection, encouraging guests to return and continue the story.

The concept was conceived under the direction of Resort Manager Melroy Fernandes alongside the resort’s culinary team.

A Master Sommelier, Fernandes has also curated thoughtful wine pairings that accompany the five-course tasting journey.
